Slow-Smoked Turkey with Cane Syrup-Coffee Glaze

Ingredients

  1. 2 gallons water
  2. 1 cup apple cider vinegar
  3. 1/2 cup ground coffee, preferably chicory coffee
  4. 1 large onion, halved
  5. 12 large thyme sprigs, tied together
  6. 1/4 cup kosher salt
  7. 1 tablespoon black peppercorns
  8. 2 cups light brown sugar or 3 cups cane syrup (see Note)
  9. One 11-pound turkey
  10. About 3 cups hickory chips
  11. Vegetable oil, for brushing
