Ingredients

  1. 1/4 cup canola oil

  3. 1/2 teaspoon minced fresh ginger
  4. Pinch of sugar
  5. Salt and freshly ground white pepper
  6. 1 pound fresh or thawed frozen soybeans in their pods
  7. 1 pound cooked skinless chicken breast meat, cut into 3/4-inch dice (about 3 cups)
  8. Two 1/2-pound Hass avocados, cut into 3/4-inch dice
  9. 3 scallions, thinly sliced on the diagonal
  10. 1 small celery rib, thinly sliced on the diagonal
  11. 1/3 cup cilantro leaves
