- 6 cloves garlic peeled, bruised
- 4cm piece ginger peeled, sliced
- 20 g dried shitake mushrooms sliced
- 2 tbsp maple syrup
- 3 spring onions cut into 4cm lengths
- 2 cinnamon sticks
- 1 orange peel removed and reserved
- 12 chicken wings
- 2 extra spring onions finely shredded
- steamed rice to serve
