Caribbean Crab Soufflé

Ingredients

  • 30g (1 oz) desiccated coconut
  • 60g (2 oz) unsalted butter
  • 30g (1 oz) celery tops, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon crushed chillies, such as Schwartz
  • 1/2 teaspoon salt
  • freshly ground black pepper to taste
  • 3 tablespoons plain flour
  • 280ml (10 fl oz) semi-skimmed milk
  • 4 egg yolks
  • 225g (8 oz) crab meat
  • 6 egg whites, stiffly beaten
  • 1/4 teaspoon fresh lemon juice

A Spicy Crab Soufflé - It's Equally Delicious Made With Lobster. My Dad Always Made This For Us On Christmas Eve.
