Ingredients

  • 2 1/2 tablespoons extra virgin olive oil
  • 1 large onion, finely chopped
  • 1 garlic clove, finely chopped
  • 300 g carrots, coarsely grated
  • 300 g zucchinis, coarsely grated
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground coriander
  • 3 tablespoons reduced-fat peanut butter
  • 2 tablespoons chopped fresh coriander
  • pepper to taste
  • 1 1/3 cups fresh wholemeal breadcrumbs
  • 1 egg, beaten
  • To serve:
  • 2 tomatoes, seeded and chopped
  • 2 tablespoons tomato sauce, chutney or pickles
  • pepper to taste
  • 4 hamburger buns
  • 4 teaspoons low-fat mayonnaise
  • 4 iceberg lettuce leaves, shredded
  • 1 spring onion, thinly sliced
