Ingredients
- 2 cups basmati or long-grain rice
- 3 tablespoons peanut oil
- 2 medium onions, peeled, halved and finely sliced
- 1 cinnamon stick
- 4 cardamom pods, crushed
- 10 black peppercorns, crushed
- 3 1/2 cups beef stock or chicken stock
- 400 g lean lamb (backstrap, rump, fillet or thick chump chops)
- 1 tablespoon oil, extra
- Salt and freshly ground black pepper
- 1/2 cup toasted slivered almonds or cashew nuts, to garnish
Description
Vary The Spicing, Adding One Or Two Whole Cloves, A Pinch Of Saffron Or A Little Turmeric To Ring The Changes With This Great Rice Dish. You Can Also Substitute Chicken Or Prawns For The Lamb.
