Cod Fish Soup

Ingredients

  • 3/4 cup light mayonnaise
  • 4 cloves garlic, crushed
  • 1 teaspoon saffron powder

  • 1 teaspoon chilli flakes
  • 1/2 baguette, sliced into 6mm rounds
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 medium onion, chopped
  • 1 leek, white part only, chopped
  • 1 pinch saffron powder
  • 1 bay leaf
  • 3/4 cup (185ml) white wine
  • 1/3 cup (85ml) red wine
  • 125g cod fillets
  • 1 cup (250ml) water
  • 1 cup (250ml) beef stock
  • 1 roma tomato, seeded and chopped
  • 1 1/2 teaspoons lemon juice
  • 3 tablespoons chopped fresh parsley, divided
  • 1 tablespoon plain flour
  • 1/2 cup light cream
  • 1 cup grated Gruyere cheese

A To-die-for Fish Soup Recipe I Had In Paris. The Original Recipe Calls For Cod Fish, But Any White Fish Could Be Substituted If Necessary.
