Ingredients
- Kebabs:
- 1 lemon, zest grated and juiced, plus 1 lemon, juiced
- ¼ cup (60 ml) olive oil
- 1 tablespoon honey
- 4 green cardamom pods, crushed and pods discarded
- 2 tablespoons chopped fresh coriander
- 450 g skinless chicken breast fillets, cut into 2.5 cm cubes
- 1 pineapple, peeled, cored and cut into chunks
- 24 grape tomatoes or cherry tomatoes
- Pita crisps:
- 4 white or wholemeal pita breads
- 2 tablespoons olive oil
- 1 large garlic clove, crushed
- 1 tablespoon chopped fresh mixed herbs or 2 teaspoons dried mixed herbs
