Emerald City Egg Sandwich

Ingredients

  • 1 ripe avocado, pitted and peeled
  • 1 Tbs. fresh squeezed lemon juice
  • 1/2 C. mayonnaise
  • 1 Tbs. prepared horseradish
  • 4 english muffins, lightly toasted
  • 8 crisp leaves of iceburg lettuce
  • 8 slices ripe tomato
  • salt and fresh ground black pepper
  • 4 hard boiled eggs, peeled and sliced

This Is One Of Our Favorite Summer Sandwiches. Quick And Easy We Keep Boiled Eggs On Hand All Summer Just For This Sandwich. The Horsey Sauce Of A Dfferent Color Gives This Sandwich A Great Twist.
