"beans & Barley" Fruit Tart

Ingredients

  • 1 C. (2 sticks) butter, room temperature
  • 2 1/2 C. finely ground nuts (use a mix of walnuts, almonds and pecans)
  • 1/3 C. sugar plus 3 Tbs. sugar (divided)
  • 1 egg
  • 1 1/2 tsp. vanilla extract (divided)
  • 1 C. whipping cream (divided)
  • 1 Tbs. cornstarch
  • 2 egg yolks
  • Your choice of washed and dried fresh fruit (use one kind or a mix of fruit such as halved strawberries, whole raspberries, halved cherries, kiwi slices or halved red seedless grapes
  • Pastry glaze to coat tart (optional)

Description

Pastry Glazes Are Commercially Available, But A Good One Can Be Made By Thinning A Jelly Such As Apricot Or Currant With Just Enough Hot Water To Make It Spreadable. If Possible, Apply With A Feather Glazing Brush.
