Razzle Dazzle Raspberry Pie

Ingredients

  • 1 C. cold butter, cubed
  • 1/2 C. ice water
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • Filling:
  • 1 large egg, beaten
  • 1 Tbs. water
  • 1 C. sugar
  • 2 1/2 Tbs. instant tapioca
  • 1 Tbs. lime juice
  • 1/4 tsp. ground ginger
  • 1/8 ts. salt
  • 1 tsp. lime zest, finely chopped
  • Pinch nutmeg
  • 4 C. raspberries
  • 4 tsp. butter
  • 1 Tbs. Half & Half
