Ingredients

  • 1/2 pound rock shrimp, shelled and cleaned
  • 3 tablespoons chopped fresh sage
  • 1/4 cup unsalted butter, softened to room temperature
  • juice of 1 lemon
  • fine sea salt and freshly ground black pepper to taste
  • 1/2 teaspoon paprika
  • 3 scallions, peeled and finely chopped
  • 1/2 cup dry breadcrumbs
  • 1/4 cup pine nuts, toasted in a sauté pan until fragrant
  • 4 butterflied rainbow trout, whole, skin on, bones removed (they are usually sold this way)
  • olive oil
