Deconstructed Caesar Salad

Ingredients

Roasted Whole Garlic

  • 4 whole garlic bulbs
  • 1 tablespoon olive oil
  • 2 sprigs parsley, stems removed, diced finely

Dressing

  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper
  • 2 garlic cloves, minced
  • 2 anchovies (or 1 tsp anchovy paste)
  • 1 tablespoon Dijon mustard (the real stuff, not the dried stuff)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red wine vinegar
  • 1 egg yolk, coddled
  • 1/3 cup safflower oil
  • 4 egg shells that have been cleaned with scalding water

Bread Crumbs

  • 1 cup of day-old rustic bread pieces
  • 3 tablespoons butter
  • 2 sprigs fresh thyme, stems removed

Parmesan

  • 4 ounces block Reggiano-Parmigiano.

White Anchovies

  • 16 store-bought white anchovies

Lettuce

  • 2 Boston (aka butter) lettuce, leaves separated
