Ingredients
Roasted Whole Garlic
- 4 whole garlic bulbs
- 1 tablespoon olive oil
- 2 sprigs parsley, stems removed, diced finely
Dressing
- 1/2 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
- 2 garlic cloves, minced
- 2 anchovies (or 1 tsp anchovy paste)
- 1 tablespoon Dijon mustard (the real stuff, not the dried stuff)
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon red wine vinegar
- 1 egg yolk, coddled
- 1/3 cup safflower oil
- 4 egg shells that have been cleaned with scalding water
Bread Crumbs
- 1 cup of day-old rustic bread pieces
- 3 tablespoons butter
- 2 sprigs fresh thyme, stems removed
Parmesan
- 4 ounces block Reggiano-Parmigiano.
White Anchovies
- 16 store-bought white anchovies
Lettuce
- 2 Boston (aka butter) lettuce, leaves separated
