  • 2 1/2 tbs (50ml) brandy
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups dried mixed fruit
  • 1/2 cup lightly toasted walnuts, chopped
  • 1 3/4 cups (263g) plain flour, sifted
  • 1 1/2 tsp baking powder
  • 2 tbs apricot jam
  • Icing sugar, to dust
  • 500g packaged almond paste
  • 500g packaged fondant icing
  • Ribbon and tulips, for decoration only
