Barbecued Shrimp On Pineapple Planks
Ingredients
- 8 jumbo or 24 large fresh or frozen shrimp (about 1 lb.)
- 1 medium fresh pineapple, crown removed and peeled
- 3 tablespoons butter or margarine, melted
- 1/4 cup bottled barbecue sauce
- 1 - 2 tablespoons chopped canned chipotle peppers in adobo sauce
- 2 cloves garlic, minced
- 1/2 cup chopped, seeded cucumber
- 1/2 cup chopped, peeled jicama
- 1 tablespoon lime juice or lemon juice
- 1/4 teaspoon salt
- 1/4 cup snipped fresh cilantro
