Ingredients

  • 1 - 1 1/4 pounds fresh or frozen catfish fillets, 1/2 to 3/4 inch thick
  • 1 recipe Pepper-Mint Slaw (see recipe below)
  • 1 egg, beaten
  • 2 tablespoons water
  • 1/4 cup yellow cornmeal
  • 1/2 of a medium poblano pepper, seeded and finely chopped (1/3 cup)
  • 2 tablespoons fine dry bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 3 tablespoons cooking oil
  • Lemon wedges
