3 Tbs. unsalted butter
 
1 yellow onion, diced
 
2 celery stalks, diced
 
2 garlic cloves, minced
 
2 tsp. chopped fresh thyme
 
2 Tbs. all-purpose flour
 
2 lb. Yukon Gold potatoes, peeled and diced
 
2 bay leaves
 
1 cup heavy cream
 
2 tsp. Worcestershire sauce
 
Salt and freshly ground black pepper, to taste
 
Pinch of cayenne pepper
 
1 Tbs. chopped fresh chives (optional)
