(3/4 pound), split, skinned boned and cut into 1 1/2- to 2-inch pieces
4 ounces Canadian-style bacon, sliced 1/8 inch thick (8 slices)
1/2 cup olive oil
1/2 cup red wine vinegar
1/2 cup chopped onion
1/4 cup snipped parsley
2 tablespoons snipped cilantro or parsley
1 teaspoon dried oregano, crushed
1/4 teaspoon ground red pepper
1/4 teaspoon salt Dash ground black pepper
