White Bean and Butternut Squash Ragout

Ingredients

  • 1 butternut squash
  • 3 tablespoons olive oil, in all
  • 4 ounces sliced pancetta, chopped
  • 1 small onion, peeled and chopped
  • 2 to 3 cloves of garlic (about 2 teaspoons minced garlic)
  • 3 15-ounce cans white beans, rinsed and drained
  • 1 14.5-ounce can reduced-sodium chicken broth
  • 2 teaspoons Herbes de Provence or Fines Herbs
  • Sea salt and freshly ground black pepper
