Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground pork
  • 1 pound ground veal
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon minced garlic, about 1 large clove
  • 2 large eggs, beaten
  • 2 1/2-inch-thick slices French bread, soaked in water and squeezed dry
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground black pepper
  • All purpose flour
