Malka's Bouillabaisse

Ingredients

1 cup dry white wine or water 250 mL
 
1 lb clams, cleaned (about 16) 500 g
 
1 lb mussels, cleaned (about 16) 500 g
 
1 tbsp olive oil 15 mL
 
3 leeks, trimmed and thinly sliced 3
 
1 onion, chopped 1
 
2 tbsp all-purpose flour 25 mL
 
1 28-oz/796 mL tin plum tomatoes, 1 with juices, pureed or broken up
 
3 fresh tomatoes, chopped 3
 
1/4 cup chopped fresh thyme, 50 mL or 1 tsp/5 mL dried
 
2 bay leaves 2
 
3 cups homemade fish stock 750 mL or water
 
1 cup dry white wine, homemade 250 mL fish stock or water
 
1/4 cup chopped fresh parsley, divided 50 mL
 
Salt and pepper to taste
 
1 tbsp saffron threads 15 mL % lb cleaned shrimp (see diagram) 375 g
 
2 lb fresh firm-fleshed white fish fillets, 1 kg
 
Skin removed (halibut, sea bass, cod), cut in 3-inch/7.5 cm chunks
 
1 12-inch/30 cm loaf French bread, 1
 
cut in chunks
