Ingredients

    1/2 lettuce, shredded
    2 cups frozen peas, cooked , cooled
    2 cup mixed Cauliflower and broccoli –raw , or very small florets steamed or m/w until crisp/tender
    1 lg carrot, grated
    200g button mushrooms, sliced
    3 hard boiled eggs
    1 cup tasty low fat cheese, grated
    1 spring onions (optional) chopped small (or chives)
    Dressing:
    1 cup unflavoured thick Greek low fat yogurt
    2 Tbs no fat French or Greek salad dressing (vinegarette)
    2 tomato, sliced, or 8 cherry tomatoes, halved
    parsley
