Navy Bean Bruschetta

Ingredients

    1 15 ounce can navy beans, drained and rinsed
    1 cup baby spinach, rinsed, picked through and sliced
    1/2 cup cherry tomatoes, halves
    1 shallot, peeled and chopped
    1 tablespoon fresh thyme
    2 tablespoons extra virgin olive oil
    2 tablespoons white wine or champagne vinegar
    salt and pepper to taste
    10 slices crusty whole wheat bread, cut into thick slices
    2 garlic cloves, peeled and cut in half
    2 tablespoons extra virgin olive oil, to grill the bread
    fresh cracked black pepper, to taste
    1/3 cup parmesan reggiano, to shave on top
