Pecan Crusted Chicken (start On Stove Top)

Ingredients

    4 boneless, skinless chicken breast halves (4 oz. each) (cut breasts in half and pound)

    2 egg whites
    2 tsp cornstarch
    juice from 1/2 lemon

    1 TB fresh parsley, minced
    zest from ½ lemon
    ½ tsp dried thyme
    ½ tsp oregano
    ½ tsp paprika
    ¼ tsp cayenne
    ½ tsp salt
    ¼ tsp black pepper
    1 Tbsp. garlic, chopped

    3/4 c pecan halves. finely chopped
    1 cup fresh, homemade bread crumbs (not toasted)

Description

Cut Bread For Crumbs Early In The Day And Allow To Dry.After Dipping Chicken In Bread Crumb Mix, Place On Rack And Allow To Dry.
