Moroccan Chicken & Chickpea Tagine

Ingredients

    1/2 teaspoon saffron threads
    125ml (1/2 cup) boiling water
    1/2 cup chopped fresh coriander
    1/2 cup chopped fresh continental parsley
    1/2 cup chopped fresh mint
    1 teaspoon tumeric
    1/2 teaspoon garam masala
    1/2 teaspoon cayenne pepper
    6 (about 900g) chicken thigh fillets (halved lengthways)
    300g sweet potato (kumara) unpeeled, cut into 4cm pieces
    400g can chickpeas (rinsed, drained)

    To serve
    fresh coriander and mint leaves
