Ingredients
- 1 large onion, chopped
2 cloves garlic, minced or pressed
2 bay leaves
2 green peppers, seeded, chopped
2 stalks celery, chopped
1 c chopped mushrooms or canned
1 jalapeno pepper, chopped
1 can kidney beans, rinsed and drained
1 can black beans, rinsed and drained
1 can chickpeas, rinsed and drained
3 c water or low fat chicken stock
2 28 oz. plum tomatoes, with juice, chopped
1 6 oz can of tomatoe paste
1 lb. ground turkey 97% fat free (use 1 lb. tofu, crumbled for
vegetarian version)
1 can corn or frozen equivalent
1 apple, chopped
2 T chili powder (you can adjust to your liking)
2 t coriander ( I also add 1 t cumin for smokey flavor)
2 T Dijon mustard
1 T blackstrap molasses
1/2 c chopped parsley or cilantro
Salt and Pepper to taste
