    3-4 Medium potatoes, cut into bite size cubes
    2 1/2 Cups broccoli florets
    2 Tbls sunflower oil
    1 Medium onion, finely chopped
    1 Large red bell pepper, cut into small dices
    1/4-1/2 Tsp dried red pepper flakes
    4 Large, fresh eggs
    Salt and pepper to taste
