- 1 1/2 cups Bisquick baking mix (I use Heart Healthy type)
2 tablespoons sugar or Splenda
1 teaspoon lemon zest, if available
3/4 cup blueberries
1/4 cup of egg substitute
3 tablespoons milk
Optional glaze (This depends on the consistency you want)
1 -2 teaspoon lemon juice
1/4 - 1/2 cup confectioners' sugar (I used 1/4 cup)
