    16 large fresh mint or basil leaves
    1 avocado, peeled, pitted, and thinly sliced
    1 cooked chicken breast, thinly sliced into 1/4 x 2-inch strips
    1 organic carrot, cut into julienne matchsticks
    1 cup mung bean sprouts
    20 round rice paper wrappers, at least 6 inches in diameter

    Asian Dipping Sauce:
    2 tablespoons fresh lime juice
    1 tablespoon rice vinegar (unseasoned)
    1 tablespoon fish sauce1 tablespoon hoisin sauce
    1 tablespoon brown sugar
    2 tablespoons water
    1 very thinly sliced serrano or Thai chile, or to taste (optional)
