Ingredients
- 1/2 c. turkey (light meat), coarsely shredded
2 1/2 c. turkey (dark meat), coarsely shredded
2 large carrots, diced
3 celery stalks w/leaves, diced
3 ears of corn in husk OR 1/2 c. leftover corn (fresh, preferably)
1 onion, diced
2 cloves garlic, minced
Can of Lesueur Early Peas, drained, OR your choice of peas
2 med. red potatoes, unpeeled, diced
1 1/2 c. water
1/4 tsp. salt
pinch red pepper flakes
3 T. fresh herb such as parsley, thyme, chopped
For sauce:
1 c. reserved starchy liquid from potatoes
2 c. milk (2% or skim is fine)
3 T. unsalted butter (no shortcuts with this!)
3 T. plain flour
pinch cayenne (opt.)
1/4 tsp. poltry seasoning
2 T. cream cheese (opt.) - reduced is fine (NO nonfat!)
salt, pepper for seasoning
For top crust:
Favorite Pie Crust (prepared or homemade)
beaten egg + couple drops water
HEARTY POT PIE--a creative, practical way to utilize leftover Thanksgiving turkey! The combination of meat is up to you! We use more dark meat in the pie to give more moistness and because we like to keep any leftover breast meat for sandwiches and chicken salad. Recipe can also be used with chicken, of course.
Yes, you can cause yourself less work by using frozen or canned veggies as well as canned soups in the place of sauce ( please don't complain about this to me--this is my recipe, isn't it?), but I prefer fresh veggies and non-processed foods. And the combo of veggies is up to you! Enjoy!
