Yellow Thai Vegetable Curry

Ingredients

    (Sauce)
    1-2 cans reduced fat coconut milk
    1/2tsp fenugreek
    1tsp ground coriander
    1tsp black mustard seeds
    1-2 yellow, green or red chillis, de seeded
    1Tbsp. ground cumin
    3/4tsp tumeric
    3 cloves garlic
    1 thumb sized piece fresh ginger, peeled & sliced
    1 stalk lemongrass, sliced thinly.
    1/2 onion
    4tbs soy sauce
    1/2 cup fresh coriander, including stems
    2 Tbsp. brown sugar
    juice of 1/2 lime
    2-3 kaffir lime leaves. fresh or frozen, cut into strips

    (Vegetables)
    1 can Chick Peas
    2 cups Pac Choy, Boc Choy, chopped
    4-6 shitake mushrooms
    1 large yellow pepper, sliced
    1 large carrot, sliced
    1 cup broccoli
    1 cup cauliflower
    Basil Leaves to garnish
