    4 large bell peppers (green or red)

    2 tbsp dried basil
    2-3 tsp garlic, minced
    1/2 cup onion, chopped small
    1 large zucchini, chopped into small cubes
    1 block firm tofu, chopped into small cubes
    1 - 7 oz can sweet yellow corn
    1 - 12 oz can black beans
    1 cup canned crushed tomatoes
