Ingredients

    1-1/2 c. brown rice (long-grain or Basmati)
    3 T. vegetable oil, butter, or ghee
    large pinch saffron
    pinch turmeric
    1/2 tsp. salt
    2-1/4 c. hot water
    1 c. onions, chopped
    2 tsp. fresh ginger, peeled and grated
    1-1/2 tsp. ground cumin seeds
    1-1/2 tsp, ground coriander seeds
    1/2 tsp. cinnamon
    pinch of cayenne
    1/2 c. water
    1 small sweet potato OR 1 medium carrot, diced
    2 c. small cauliflower florets
    1 medium bell pepper, diced
    1 tomato, diced
    1/3 c. raisins
    1-1/2 c. chick peas, canned and drained or soaked and cooked
