Coconut Vegetable Curry

Ingredients

    2 tsp Canola Oil
    2 Medium Onions, chopped
    2-3 Cloves Garlic
    4 Medium Potatoes, peeled and diced
    2/4 head Cauliflower , cut to bite sized pieces
    2 cups cut green beans
    4 medium carrots, sliced
    3-4 tsp Curry powder (or more)
    2 tsp (or more) grated fresh ginger
    1/2 tsp Tumeric
    15 oz Can Lite Coconut Milk
    Salt, Pepper to taste
    1 cup frozen Peas thawed
    1/4 cup brown sugar
    540 ml can Chick Peas
    2 cups water
