Baked Shrimp And Hot-pepper Ginger Cakes

Ingredients

    2 thick slices white bread, crusts removed
    250 grams peeled raw shrimp (about 20 medium)
    1 green hot pepper, seeded and finely chopped
    1-inch (2.5 cm) piece fresh ginger, peeled and finely chopped
    4 garlic cloves, finely chopped
    1 tbsp chopped coriander
    1 teaspoon salt
    1 egg
    oil, for spraying
    To Serve:
    baby lettuce leaves, arugula, or watercress
    sweet chili sauce (see separate recipe)
