T's 'healthy, Quick & Cheap' Chicken Parm

Ingredients

    * One 15 oz. can of tomato sauce (I like Hunts)
    * One 14.5 oz. can of plain petite diced tomatoes (I like Hunts or S&W) *with all the juice*

    * 1 tbsp. granulated sugar
    * 1 tbsp. Italian seasoning (or the equivalent)
    * 1 clove garlic (or the equivalent of dehydrated/jarred)
    * 1/2 tsp. salt & 1/4 tsp. black pepper

    * 3.75 oz. each: (1.5 oz./svg.)
    ... sweet onions, finely chopped;
    ... spinach, finely chopped;
    ... sweet baby carrots, grated;
    ... sweet red bell peppers, diced or chopped.

    * 5 oz. white beans, well-drained & rinsed in cold water (I like S&W)

    * 4.25 oz. whole wheat/whole grain spaghetti noodles
    ... cooked to 'al dente' in water w/olive oil & salt.

    * 5 oz. chicken breast tenders
    ... brushed w/olive oil & salt/peppered

    * 4.5 oz. (1.5oz./svg.) shredded mozzerella
