    - coconut
    1/4 cup sugar
    1 tbsp tapioca starch
    2 tsp baking powder
    1/2 tsp sea salt
    1/4 tsp nutmeg
    2 eggs
    2 tbsp applesauce, unsweetened
    2 tbsp olive oil
    1/2 cup lite maple syrup
    1 tbsp vanilla
    3/4 - 1 cup of vanilla non-dairy milk
    1 1/2 cups of berries
