Ingredients
- 1lg (8") pkg spinach tortilla's - low fat (sundried tomatoe and pesto flavors are great too)
1 pkg of black beans and rice
1 lg white onion
3 cloves of garlic minced
1 cup home made chunky salsa (see my recipe)
1 can of sweet corn (niblets or peaches & cream)
1lb of ground Turkey (chicken or lean gr beef can be substituted or meat can be omitted for Vegitarian style)
1pkg reduced sodium taco seasoning
2 tbs olive oil (or spray)
