Ingredients
- 2 tsp virgin coconut oil (or canola oil)
2 tsp brown mustard seeds
1 med yellow onion, diced small
1 cup medium grain brown rice
1 Tbl red curry paste
1 cup unsweetened lite coconut milk
1 sweet potato peeled & cut into 1" pieces (3/4lb)
1 small cauliflower, cut into florets
2 cups chick peas (cooked from dried cut the sodium by more than 300mg!)
fresh cilantro for serving

I Found This Recipe In Martha Stewart Everyday, But The Caloreis And Fat Were Too High. I Shaved Off Over 200 Calories, More Than 300mg Sodium And More Than Half The Fat. Enjoy!
