Cheesy Chicken, Brown Rice, And Veggie Casserole

Ingredients

    2 cups cooked instant brown rice (cook in chicken stock instead of water for more flavor)
    1 cup broccoli, finely chopped
    1 cup cauliflower, finely chopped
    2 large carrots, grated
    4 tsp. olive oil, approximately, divided
    1/2 onion, finely diced (you could use 1 onion)
    2 garlic cloves, finely minced
    1 tsp. ground thyme
    1/2 tsp. ground poultry seasoning
    1 1/2 tsp Italian seasoning, divided
    salt and fresh ground black pepper to taste

    1- 1 1/2 cups diced leftover chicken, cut in 1/2 inch dice

    1/2 cup chicken stock

    1/2 cup low fat sour cream (don't use fat-free)

    1/2 cup grated Asiago cheese (or fresh Parmesan)
    1 cups grated white sharp cheddar cheese (or low fat Italian blend, cheddar, etc)
    1 cup shredded cheddar cheese (or low fat cheddar)
    4 tablespoons fresh flat leaf parsley, chopped, divided
    1-2 pieces whole wheat bread, processed into bread crumbs (about 1 cup)
    1/2 teaspoon garlic powder
