    1 TBS mexican style chili powder (2 tsp)
    1 1/3 cup corn meal (2/3 cup)
    4 TBS whole wheat flour (2 TBS)
    1 tsp baking powder (1/2 tsp)
    6 TBS butter, melted (3 TBS)
    2 cups buttermilk (1 cup)
    2 eggs (1)
    1 cup frozen corn (1/2 cup)
    1-2 TBS canola oil for the pan
    optional toppings: sour cream, salsa, cilantro
