2 pounds beef stew meat, cut in 3/4-inch cubes
4 bay leaves
1 Tbsp black peppercorns
2 quarts beef stock (used low sodium organic beef broth)
2 large onions, chopped (approx 328g)
3 medium carrots, chopped (approx 229g)
2 stalks celery, diced (approx 118g)
4 large cloves of garlic, minced (approx 38g)
1 can dark red kidney beans, drained & rinsed
(used 439g Giant No Salt Added)
9 medium-size fresh beets, boiled, skinned, and shredded
(approx 1253g)
1/2 head of cabbage, shredded (approx 683g)
3/4 small can tomato paste (approx 110g)
Juice of 1 fresh lemon (or 3 Tbsp Lemon Juice)
2 cups hot water
1 handful fresh dill, minced (approx 7g)
1 handful fresh parsley, minced (approx 10g)
freshly ground pepper, to taste
Sour cream (optional)
