Barley Vegetable Soup

Ingredients

    64 oz Low Sodium, LF Chicken Stock or Vegetable Stock
    1 cup Pearl Barley (cook according to the directions)
    Add Vegetables
    20 oz Spinach
    1 - 2 cups Bok Choy, chopped
    2 cups zucchini or summer squash, sliced
    1 - 2 cups carrots, sliced
    2 cups green beans
    2 cups broccoli, chopped

    Pesto:
    2 T Basil, finely chopped
    2T Parmesan, grated
    1/2 T Butter
    1 T Olive Oil
