Ingredients
- 2 red bell peppers (cut into four sections each)
Filling:
1 cup soaked & drained raw organic cashews
2 large Roma tomatoes
1 stick of celery
juice of 1 small seedless lemon
1 tbsp olive oil
2 cloves garlic, (mince with garlic press)
sea salt to taste (I use Celtic sea salt)
1/4 tsp. of cayenne powder, oregano & basil
(note: you can use up to 1/2 tsp. of these spices. It's really a matter of taste. I like it less strong, but if you want more punch, then use up to 1/2 tsp.)
