- 1 cup ketchup
- 1/4 cup brewed dark-roast coffee or espresso
- 1 tablespoon balsamic vinegar
- 1 tablespoon brown sugar
- 2 teaspoons ground ancho chile powder
- 4 New York strip steaks, each 10 to 12 ounces and about1 inch thick, trimmed of excess fat
- 2 tablespoons extra-virgin olive oil
- 3/4 teaspoon kosher salt
- 3/4 teaspoon freshly ground black pepper
