Thai Chicken Stew Recipe

Ingredients

  • 1 1/2 lb chicken legs separated into
  •     drumsticks and thighs, skin removed
  •     Salt to taste
  • 2 Tbsp. vegetable oil
  • 1 c. chopped onion
  • 5 x garlic cloves peeled
  • 1 Tbsp. grated gingerroot
  • 1 c. sliced carrots
  • 1 c. red bell pepper in 1" pcs
  • 1 c. sliced mushrooms
  • 1 tsp red curry paste - (to 2) or possibly to taste
  • 2 can 'light' unsweetened coconut lowfat milk - (14 ounce ea)
  • 1/2 tsp galanga root pwdr
  • 1/2 tsp dry lemongrass flakes
  • 1 tsp grnd cumin
  • 1 x bay leaf
  • 1 c. broccoli florets
  • 1/2 c. canned bamboo shoots liquid removed
  • 1/2 c. canned water chestnuts liquid removed
  • 8 x ears canned baby corn liquid removed
  •     Fresh lemon juice to taste
  • 1/4 c. chopped fresh cilantro
  • 1/4 c. chopped fresh mint
