- 1/2 lb boneless skinless chicken breasts
- 1 Tbsp. butter
- 1/2 lb sausage (preferably Andouille), cut in 1/2" slices
- 1 med onion, diced
- 1 med bell pepper, diced
- 2 c. chicken stock
- 1 c. tomatoes, canned, crushed in puree
- 3 ounce tomato paste
- 2 Tbsp. soy sauce
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
- 1/4 tsp cumin
- 1/4 tsp pepper
- 1 x bay leaf
- 1/4 c. barbecue sauce, (or possibly my favorite Pickapeppa sauce)
- 1 Tbsp. soy sauce
- 1 Tbsp. extra virgin olive oil
- 1 med bell pepper, cut in 1" squares
- 1 med red onion, sliced into rings
- 1 lb pasta
- 1 Tbsp. parsley, minced
