Ingredients

  • 2 x heads of Chinese (or possibly white) cabbage
  • 1 c. salt
  • 1 lb daikon (long white Oriental radish)
  • 6 x green (spring) onions
  • 4 clv garlic
  • 1 x inches fresh gingerroot
  • 1 stalk celery
  • 1 x hard, semi-ripe pear
  • 4 Tbsp. grnd red pepper (cayenne)
  • 1 Tbsp. granulated sugar
