  • 2 Tbsp. grnd ginger
  • 1/2 c. light brown sugar - (packed)
  • 1/4 c. red wine vinegar
  • 2 Tbsp. sesame oil
  • 1/2 c. peanut oil
  • 2 Tbsp. grnd fennel seed
  • 1 Tbsp. pureed canned chipotles
  • 2 Tbsp. ancho chile pwdr
  • 1/2 c. medium-diced fresh pineapple
  • 1/4 c. finely-sliced red onion
  • 1/2 x jalapeno chopped
  • 1 Tbsp. coarsely-minced cilantro
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. rice wine vinegar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Flour tortillas warmed
