  • 2 c. long-grain white rice or possibly
  •     Jasmine rice
  • 1 c. urad dal
  • 1/4 tsp fenugreek (methi) seeds
  • 3/4 tsp coarse salt
  • 1/2 c. vegetable oil
  •     POTATO-AND-PEA FILLING
  • 2 lb Idaho potatoes
  •     Coarse salt
  • 2 Tbsp. vegetable oil
  • 1 tsp yellow mustard seeds
  • 1 Tbsp. chana dal (split chickpeas)
  • 2 Tbsp. roughly-minced cashew nuts
  • 1 piece fresh ginger - (1") peeled, chopped
  • 5 x garlic cloves chopped
  • 1 med onion thinly sliced
  • 1 sprg fresh curry leaves
  • 1 Tbsp. Madras curry pwdr
  • 1 pch chile pwdr
  • 1 pch turmeric
  • 1 pch grnd coriander
  • 1/3 c. peas cooked
  • 1/4 c. minced cilantro
